Deliciously simple, Teedo’s Famous Salsa will quickly become your new favorite. Filled with tomatoes, avocado, cilantro, and lime juice.
I may or may not have purchased 4 cake stands without my husband knowing. What he doesn’t know can’t hurt him…am I right, ladies?
That is until they arrived on my doorstep this morning.
Eff.
I tried to intercept the Fed Ex man but lets be honest. Stealth is NOT my middle name. So, I have an upset husband that sees a bunch of pretty stands with no cake on them and literally no home for these cake stands. I just organized my pantry to fit exactly what I had a week ago, so…no room at the inn.
YOU GUYS. Those stupid online cutesy party shops were calling my name so I HAD to look. {Obviously.} And then I found some adorable baby pink cake stands and HAD to have them. Then there was a jade one with scalloped edges that I HAD to have too. And then there was a mint one that somehow made its way into my cart too. I knew my mini shopping spree was a little excessive, so I found a free shipping coupon which somehow made me feel better about the entire situation.
Incase you were on the fence of whether or not I had ALL typical female tendencies, the above paragraph should answer that question.
So, I’ll probably be making lots of cakes in the near future?! They work wonders for my thunder thighs. Um, NOT.
In other news, I made salsa….FAMOUS salsa! A recipe from my friend Jenny’s cookbook.
This is Jenny’s book! I’ve had it on my shelf for a while and never dove right in head first until a few weeks ago where I discovered some seriously yummy recipes…like this salsa.

What drew me to this recipe was {1} my addiction to all foods Mexican and {2} the ease of this recipe. It’s seriously so simple to throw together. Here’s how to make it:
Throw your ingredients into a food processor and pulse until it’s at the consistency you want.
That’s basically it.
This is made just like a restaurant-style salsa, but has two avocados in it! Um, hello delicious 🙂 It’s like a fabulous cross between a chunky salsa and guacamole. So good!
We just had ours with chips, but you could use this in any application that a salsa would be used.
On eggs, in a burritos, etc.
Try it out and then you’ll know why it’s famous too 🙂 Better yet, pick up a copy of Jenny’s book and make this along with some other amazing recipes. Hope you like it!

Teedo's Famous Salsa
Ingredients
- 14.5 oz petite diced tomatoes 1 can
- 10 oz diced tomatoes with green chiles 1 can, Rotel
- 2 avocados peeled and seeded
- 1 1/2 cups cilantro
- 1 clove garlic minced
- 1/2 lime juice
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions
- Place all ingredients into blender and pulse to desired consistency. Pour into bowl and serve with tortilla chips.
This was a big hit on Super Bowl Sunday!!! The avocados really make it special. I used fire roasted tomatoes. It was so easy and delicious. Thanks for the great recipe!

Oooo! Lovely. I love the avocados. Yeah, I just went crazy on decorations for my son’s 1st bday party. And it was just going to magically appear at the party then boom… delivered while I am not home, but guess who it. Oops!

I’m sure it doesn’t last long, but on the off chance you have leftovers…does it keep for a couple days? I wasn’t sure since it has avacado in it.
