Macro Friendly Harvest Salad

Need a salad that is warm AND filling? Look no further! This is filled with spinach, precooked brown rice, fat free feta cheese, sweet apples, toasted almonds and balsamic dressing. Yum! Chicken is optional. You can toss this all together with warm brown rice and quinoa or enjoy cold…your choice!

Ingredients

  • 3 oz baby spinach
  • 1/4 cup toasted sliced almonds
  • 1/2 cup fat free feta cheese
  • 1 pouch precooked quinoa and brown rice I used Seeds of Change brand from Costco; about 2 cups
  • 1 whole fuji apple cored and diced
  • 1/2 cup low fat balsamic dressing use one that you like!

Instructions

  • Add all ingredients to a large bowl. Toss with dressing and serve.

The more accurate macros for 1 serving (1/6th of a recipe) are as follows: 153 calories, 6.2g F/22.2g C/5.3g P. Feel free to add in grilled chicken or some lunch meat to add more protein.
