This healthy and yummy Hummus Veggie Wrap recipe requires no cooking and can be ready in 10 minutes! Fill with your favorite vegetables!

Hummus and Veggie Wrap

You guys. Guess what. I just signed my daughter up for Kindergarten yesterday. I took her to the elementary school, filled out the paperwork and BAM. She’s in.

SOMEBODY STOP THE CLOCK.

Pretty sure I was just pregnant. Wait…..that baby wasn’t my daughter? I have a son?!

{I’m kidding, Mom.}

We’re going to a kindergarten orientation next week. The little flyer said there would be pizza, a tour, a gift for the new students and a meet and greet with the teachers. Brooke was hesitant and seemed overwhelmed by the whole thing, but then she overheard the ‘pizza’ and ‘present’ part of my conversation with my husband….and then miraculously became fine.

Kids.

ANYWAYS. That’s the latest on the school front. I’m going to go cry myself to sleep now.

Hummus and Veggie Wrap

In other news, I’ve gotten even lazier in the kitchen and served these wraps for dinner last week.

Yes, it’s possible for me to get even lazier. Oh you guys.

No cooking required, ready in 10 minutes, healthy and yummy Hummus and Veggie Wraps. That’s what we had. With orange slices and carrots too. It’s like breakfast for dinner except lunch. Totally acceptable, right? At my house anything goes.

For my wraps, I just grabbed the veggies I had on hand, but anything will work. I used grated carrot, cucumber, tomato, peppers, onion, baby kale and spinach. Oh and hummus, but that’s sort of a given. I made these again the next day but added in some deli pepper turkey for some extra protein. BEST IDEA EVER. I love pepper turkey and buy it whenever it’s on sale because that shiz gets expensive reeeeeeal quick. Slap it all on, roll it up and enjoy. Easy peasy and will last a couple days in the fridge if you want to make in advance for a grab and go lunch….or dinner.

My daughter had a modified version with no onion. I tried to sneak in a few tomatoes, but alas. The girl isn’t color blind.

Ingredients
 
 

  • 2 large flour tortillas
  • 1/2 cup hummus
  • sliced deli pepper turkey optional
  • 1/4 cup grated cheddar cheese

any veggies you like:

  • cucumber
  • carrot
  • peppers
  • onion
  • baby kale
  • spinach
  • tomatoes etc.

Instructions
 

  • Spread each tortilla with 1/4 cup hummus each. Fill with any veggies, wrap and eat.
