We are still loving New York City! We haven’t run out of things to do. I realize we have only been here about two weeks, but I take it as a good sign. Our movers still haven’t shown up with our stuff (insert all the angry emojis here…) so I’ve been forced to get creative with our dinners. Cooking without cookware isn’t easy. BUT! After a quick search on the NYC parks website, I was able to find all the parks in the city with free grills to use 🙂

So, last week we headed out on the most gorgeous summer day and cooked up some yummy hot dogs with a fresh corn salad to top. These are some of the photos I took throughout the evening. I love that wherever we go in this glorious city, the water is never too far away.

Since we have gotten here, I’ve been trying to get my kids to eat balanced meals regardless of whether or not we have pots and pans. Normally, if I’m introducing a new dinner recipe that is UNfamiliar, I try to put other items onto their plates I know they will eat that ARE familiar. The corn salad is definitely something I haven’t made before, especially up on top of a hot dog (my 4 year old was very concerned about it….the horror!!) but when I have their favorite fruits on their plates (peaches, raspberries and mango) things seem a little more bearable. Going a step further, serving the hot dog separately from the bun and the corn salad makes the little people in my life even happier. Usually, they eat what they know and love and leave the rest. But the rule at my house for all picky eaters is they need to have the number of bites that correspond with their age. So Blake is 4 and he had to eat four bites before he could be excused. (Brooke was devastated when she turned 8….hahaha!)

Hot dogs, especially Hebrew National hot dogs, are a great convenience food that any picky eater can get behind! They only take minutes to prep since you just have to reheat to enjoy. Hebrew National dogs are premium quality, made with no fillers which is important to me when it comes to hot dogs….and all food. My kids decided that we needed to buy a boat. Also! I didn’t realize you could rent wave runners and ride all around the harbor! I MUST DO THIS.

For the corn salad, I used some culprits that you could probably guess (corn, cilantro, jalapeno, onion) but I also finely diced in a whole yellow squash too. Because it is literally the same color as the corn and cut small, my kids had NO IDEA! Adding nutrients where I can, ya’ll. Sneaky moms unite!

But seriously, can you pick out the yellow squash in this photo? I can’t 🙂

Incase you’re wondering, Blake was asleep in the stroller for most of this meal. He woke up to eat some dinner and then went right back down. All this humidity and walking is tiring us all out my 6pm!

Helpful Recipe Links and Tips

I used fresh sweet corn that I cut off the cob. Canned corn could be used in a pinch, but I’d highly recommend using fresh, especially because it’s so sweet in the summer!

I also only used half a jalapeno pepper because we are weaklings. Feel free to use as much or as little as you’d like. It also depends on the level of spiciness of the jalapeno too. I’ve had ones that burn my face off and then others that tasted like green bell peppers. SO weird.

If you are grilling outside, be sure to use longer tongs so you don’t singe your arm hairs. It’s also safer!

This makes for a great camping recipe too! My parents have these hot dog roasters that work amazing!!

I’m not sure if this makes me look more like a tourist or more like a New Yorker, but I got this hat.

Mexican Corn Salad Hot Dogs

Ingredients

For the corn salad:

  • 2 ears of Corn
  • 1 small Yellow squash finely diced
  • 1/4 cup chopped fresh Cilantro
  • 2 Limes juiced
  • 1/2-1 Jalapeño finely diced
  • 2 Green onions chopped
  • Salt & pepper to taste
  • 7 Hebrew National All-Beef Franks 1 package
  • 7 hot dog buns

Instructions

  • Preheat outdoor grill.
  • While grill is preheating, make corn salad: cut fresh kernels off the corn and place into a bowl. Drag the back of a knife across the corn cobs to remove the milk and add that to the bowl as well. Stir in the squash, cilantro, lime juice, Jalapeño, green onion, salt, pepper and olive oil. Taste and adjust seasonings to your liking. Store in refrigerator.
  • Grill hot dogs to your liking and add to soft buns. Top with corn salad and serve immediately.
