Macro Friendly Mini Meatloaves
When you need a comforting dinner or a great make-ahead, protein-rich meal, these mini meatloaves are the best! Made with extra lean ground beef and baked with sugar free ketchup to keep the carbs low.
Ingredients
- 2 pounds extra lean ground beef 96/4
- 1 cup yellow onion finely diced
- 2 teaspoons Worcestershire sauce
- 1/4 cup plain bread crumbs
- 1/4 cup sugar free ketchup I used G Hughes brand
- 1 large egg
- 1/4 cup skim milk I used fairlife
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- salt & pepper to taste
- 9 tablespoons sugar free ketchup for topping the
Instructions
- Preheat oven to 375 degrees. Line a half sheet pan or cookie sheet with sides with foil and spray with nonstick cooking spray. Set aside.
- In a large bowl, mix ground beef together with onion, Worcestershire sauce, bread crumbs, ketchup, egg, milk, onion powder, garlic powder, salt and pepper.
- Divide into 9 even portions (I used an ice cream to portion evenly), form into mini meatloaves and place onto prepared baking sheet. Spread a heaping tablespoon of sugar free ketchup over each meatloaf and bake 25-30 minutes or until the centers reach an internal temperature of 165 degrees F. Serve warm.
