Growing up, I hated sandwiches. I was quite the picky eater….allegedly. Pretty sure my Mom wanted to pull her hair out every time she’d recommend something for me to take to school for lunch and I’d refuse. You’d think then that maybe she’d just buy me a school lunch, right? Well, in Canada, they don’t have cafeterias or school lunches to purchase. Everyone brought sack lunches from home. Even if that were an option, my Mom is all about homemade, healthy meals. She doesn’t buy processed anything and makes every meal from scratch. My other brothers and sisters had no problem with sandwiches. Me on the other hand was a different story. I hated them with the passion of a thousand fiery suns {what?} and got sick of cheese and crackers REAL quick.
Then one day, my Mom packed me these. Salad pita pockets. Basically salad stuffed into a pita pocket with a few extra add in’s like turkey and cheese. Drizzle a little salad dressing over the whole thing, and that’s lunch! I LOVED these things, so this is what I got the majority of the time with a piece of fruit and a little treat.
Fast forward to today and guess what? I have a daughter who hates sandwiches.
Karma.
She will be starting preschool next week {what? already? REALLY?} and has to bring a lunch. I want her to love what I pack for her, but also want it to be healthy too. When browsing Pinterest the other day, I remembered these pitas my Mom packed for me and decided to give them a whirl on her. Guess who loves them? #likemotherlikedaughter This is practically a well balanced meal all in one! Veggies, whole grains, protein and dairy and together in a cute little package.
Salad pita pockets for the win!!
Because my baby is only 4, I opted for the mini pita pockets because they’re easier to handle for her little hands and less messy. She loves colby-jack cheese and turkey, so that’s what I stuffed into these little guys.
These Sargento Colby-Jack cheese slices are perfect for this. Just cut into triangles and place inside your pita with some deli meat and lettuce. Refrigerate until you’re ready to serve.
Once you’re ready to eat, drizzle on your salad dressing of choice and dig in. Of course my little one loves Ranch dressing so that’s what went into hers. I used this recipe for ranch dressing.
See what I mean about perfect for little hands? Two of these mini pitas are just the right size for her. If you’re an adult, feel free to use the normal sized ones. Overall, a yummy healthy lunch that we love! This school year, give these a try!
Mini Salad Pita Pocket Recipe
Ingredients
- 4 mini pita pockets
- 2 slices Sargento Colby Jack Cheese
- 2 slices deli turkey
- lettuce and other salad fixings
- salad dressing
Instructions
- Slice 1/4 of the pita off the top and open gently. Stuff each pita with 1/2 slice of cheese and turkey and then lettuce and any other veggies you’d like. Refrigerate until ready to serve. Drizzle salad dressing overtop and serve.
