After all these sweet cupcake recipes, I think it’s about time for something savory! And, this my friends is the bomb.com. Ridiculously easy to do and so fast! Basically, this Spicy Texas Ranch Filled Biscuit is a store bought biscuit dough that is pressed into a jumbo muffin tin and filled with ranch dressing, blue cheese, chicken nuggets {tossed in hot sauce and butter} and then topped with more ranch dressing, blue cheese and shredded mozzarella and cheddar for good measure. Of course it wouldn’t be complete without some nice fresh cilantro on top! A girl needs her vegetables! {HA!}
This makes for a great football or party food and if you have kids you’re feeding {or husbands who can’t take the heat}, you can adjust the heat level to them as well {same goes for the blue cheese}. I think blue cheese and hot wings…or in this case spicy chicken nuggets…..go together very well. If you are unsure of the whole thing than just add a little amount of both and work from there. 1/4 cup of hot sauce is pretty spicy, so I’d recommend starting with half the amount.
Other then those few notes, you are good to go! Very simple ingredients for this one! Perfect for a lazy weekend! I’ll be busy the next two days running, cooking and teaching Sunday School, but you all normal folk should have a relaxing two days off and give these a whirl! They’re mighty tasty! TGIF! 🙂
Spicy Texas Ranch Biscuit Cups
Ingredients
- 1 can refrigerated flaky biscuits 8 large biscuits
- 2 cups cooked & cubed chicken nuggets or fingers, I warm mine in the microwave
- 1/4 cup hot sauce
- 2 tablespoons butter
- 1/4 cup ranch dressing plus 2 tablespoons
- 1/2 cup blue cheese crumbled
- 1/2 cup mozzarella cheese grated
- 1/2 cup cheddar cheese grated
- chopped cilantro for garnish
Instructions
- Preheat oven to 350 degrees. Lightly grease 8 jumbo muffin tins with non stick cooking spray.
- Pop open can of biscuits. Press each biscuit dough round into the bottom and up the sides (about 1/2 way) of greased pan.
- In a large bowl, melt butter and hot sauce together. Stir in chicken to coat. Set aside.
To assemble:
- Spread 1/2 tablespoon ranch dressing onto bottom of biscuit bowls. Sprinkle 1/2 tablespoon of blue cheese crumbles onto dressing and top with about 1/4 cup of prepared chicken. Top chicken with another 1/2 tablespoon of ranch dressing, 1/2 tablespoon blue cheese crumbles and 1 tablespoon each of mozzarella and cheddar cheeses.
- Bake for 15-20 minutes or until edges have browned and dough is thoroughly cooked. Cool 5 minutes before removing from pans. Top with chopped cilantro and serve warm with more ranch.
