Let me explain.

This salad is the bomb and I randomly came up with the idea one day….or so I thought.

As I was making it to have with our dinner a few nights ago, I was thinking of how I came up with the idea. I thought maybe I had dreamt it {because that happens sometimes…weird, I know} or maybe I just randomly came up with it because my husband asked for strawberry salad and I had a zillion avocados to use.

Anyways, I kept making it still wondering how the heck this recipe got into my brain and couldn’t figure it out.

Well, fast forward to yesterday when I was on Pinterest and I saw a recipe I pinned from Maria for her Kale, Strawberry & Avocado Salad with Lemon Poppyseed Dressing from when she first posted it.

Umm….problem solved?! I’m such an idiot.

I know Maria pretty well. I go to her site frequently. I love all her cookie recipes. Her little boy makes my womb quiver….and I think subconsciously got me pregnant with a boy.

And, I couldn’t remember that she gave me the idea to throw avocados into my strawberry salad.

LOSER.

I’m such a doofas and I cannot deny it.

I’ve told you all before that my memory is crap and this CLEARLY just proves my point.

So, be sure to check out Maria’s recipe because she is the genius behind this one.

You can give me credit for the bacon, but that’s about it! Haha. Here’s how you make this:

IMG_0023Start by cooking some bacon. I only used two slices for the dressing, but feel free to add in more! I had four slices left in my package, so I just cooked them all. Don’t mind this misleading photo.

IMG_0003Next, measure out all your ingredients for the dressing: mayonnaise, white vinegar, granulated sugar, poppy seeds, salt and pepper.

IMG_0011Crumble your bacon into the dressing and that’s it!

Strawberry Avocado Salad with Poppyseed Dressing

Strawberry Avocado Salad is a little twist on an original recipe and gets you a kicked up amazing new version of a salad everyone loves!
servings 2 servings
Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes

Ingredients

  • 6 cups baby kale prewashed kind
  • 2 cups sliced strawberries
  • 1 ripe avocado sliced

for the dressing-

Instructions

  • Place kale, strawberries and avocado into a large bowl and set aside.
  • For the dressing, cook bacon until crisp. Remove from pan and drain bacon on paper towels. Crumble into small pieces and whisk together with remaining ingredients. Drizzle over salad and serve.

    I absolutely loved this salad. I did tweak a few things and use a baby spring green mix instead of kale because I didn’t have any, and for the dressing I used greek yogurt instead of mayo and honey instead of sugar but all in all, a great base for a salad. The textures, the flavor combinations, the smells coming from this salad were amazing!!!!! I could eat this every single day and probably will now that our strawberries are starting to ripen.     This is a really lovely salad! I’m so glad I tried it out now so I can enjoy it all throughout strawberry season. My store didn’t have any baby kale so I subbed a spinach and spring greens blend instead. I’d love to try it with the kale though! I also added in a little blue cheese because I had some on hand to use up. It added another great layer of flavor. This salad just has a really wonderful balance. It’s simple, but so good and the dressing is the perfect complement to the other ingredients. Love it! Thanks for sharing!

    I’m sure Maria will give you a pass for Pregnancy Brain:-)…When I was preggo I almost drove away without paying for my gas. The lady came out yelling at me and I was like….”But I’m Pregnant!” I didn’t mean it. Sobbing. The lady didn’t buy it and was so mean:-)

    What is wonderful though is the idea of Strawberries with avocados. Yum and the bacon is a great add. This whole salad sounds so good, especially with the good strawberries starting to hit the market.
