I’d give you a high five, but most of you readers aren’t exactly in arms reach…plus I don’t have the energy to lift my arms past the keyboard. So, you’re outta luck. But if it makes you feel any better, I still love you….so much so that I made you dinner.

I made you something tasty and tangy and delightfully delicious! Remember this Jalapeno Artichoke Dip from August? This is basically that recipe, but minus the jalapenos {because I forgot to get them at the store} and with a little extra cheese. Aaaand smothered onto chicken. Forreals. It’s life changing.

ANYWAYS, this dish takes 10 minutes of prep and leaves no pots or pans! Holla back, ya’ll! I used heavy duty foil, greased them well and made individual packets of this cheesy goodness. 30 minutes in a hot oven and that’s dinner. Serve over whatever you feel like. I made some quinoa to keep this gluten free and up the amount of protein in the dish, but use whatever you have on hand. Rice, pasta, a leather boot…it don’t mattah.

Here are the deets:

chickenSlice or cube up some chicken and place onto well greased pieces of foil. Sprinkle with salt and pepper.

cheese ingredientsThen into a bowl, measure out your 3 cheeses, artichokes and other miscellaneous ingredients. Feel free to add in diced jalapenos! I didn’t because I’m blonde AND pregnant…therefore forgot to buy them at the store even though I had it written on my list. I’m so smrt. Stir this until smooth….

chicken 1and divide between the chicken. Top with more cheese and fold into packets.

packetBake at 375 for 30 minutes, top with cilantro and serve with whatever your heart desires.

Three Cheese Chicken Artichoke Bake

This Chicken Artichoke Bake is an easy and simple dinner ready in a snap! Plus, no dishes! Holla!

Cook Time 30 minutes
Total Time 40 minutes

Ingredients

  • 2 large chicken breasts cubed or sliced
  • salt & pepper
  • 6 oz cream cheese
  • 1/4 cup mayonnaise or sour cream
  • 1/2 cup grated cheddar cheese + more for topping
  • 3/4 cup grated parmesan cheese + more for topping
  • 1 1/3 cups marinated artichoke hearts drained and chopped
  • 1 jalapeno seeded and chopped, optional
  • salt and pepper to taste
  • chopped cilantro as garnish, optional

Instructions

  • Preheat oven to 375 degrees. Spray 4 heavy duty squares of foil with nonstick cooking spray. Divide chicken between the foil squares. Sprinkle with salt and pepper. Set aside.
  • In a large bowl, combine remaining ingredients. Divide into 4 and spoon over chicken. Top with remaining cheese if desired. Close packets to seal and bake 30 minutes until chicken is cooked thoroughly.
  • Serve hot over rice, quinoa or anything else you like.

    If one did not want to heat the oven in this summer heat, do you think it could be done lining the bottom of a large crockpot?

    This was surprisingly good! I did opt to include the jalapeños, although my pregnancy brain also fell short, as I started the process without them and added them on top before closing the packets lol. Coming out they were runny and didn’t look overly appetizing, but I served over rice and it was a hit!

    I do also agree wth another comment that the topping amount is off based on the amount of chicken. I had 3 large chicken breasts and there was plenty of the cream cheese mixture leftover–and I added a generous amount to all 4 of my packets.

    I bet this would be great with adding some spinach to these as well. But maybe that’s just me… I’ve been going spinach crazy and blending it into my scrambled eggs, I even blended some into the dressing for a veggie ham and pasta salad last night cuz I’m weird like that.

    Made this for dinner tonight – delish!!!! My only input would be that 30 mins was too long to cook the chicken. Our chicken was really dry. But the flavor was great. I also would recommend definitely adding the jalepeno.

    I did not love this meal. The idea seemed so perfect, but it did not turn out..it was too rich and the mayo taste was very distinct. I think you could cut the mayo and cream cheese portions in half. Also be aware that this makes a lot of cheesy artichoke mixture so i would suggest using four chicken breasts to make the meat to sauce/topping ratio more proportionate. I was disappointed, but with some changes this could work for my family.

    I made this tonight and EVERYONE in my family love it, even my one year old and SUPER picky three year old. I just didn’t tell my husband how healthy the quinoa was 🙂

    Look at how creative you are with your cute packets! I love cooking in individual packets, makes it so easy for clean-up. But I am going to skip the leather boot and just go for extra artichokes *wink.
