Buffalo Guacamole

Buffalo Guacamole is on crack….in the best way possible. Made with blue cheese and bacon it’s the love child of Buffalo Chicken Dip and Classic Guacamole. Perfect for the Super Bowl, ya’ll!

Buffalo Guacamole | Perfect as an Appetizer

Speaking of avocados, I made you something evil with them. And delicious. And easy. And creamy. And garlicky. And smokey. Because the super bowl is just around the corner…or so I hear. And because I’m a guacamole lover, not a hater. This recipe is my go-to guacamole recipe but on crack.

I added bacon, blue cheese, and hot sauce to this version and created something ri-donk-ulous. People *will* go crazy for this guac because it’s different than regular guacamole but just as addicting.

Main Ingredients Needed

Next time you’re at the store looking for guac ingredients look for these! Here’s what you need to make Buffalo Guacamole:

  • Bacon – everything is always better with bacon. Instead of cooking strips and crumbling you could always use store-bought Bacon Bits.
  • Avocados – make sure they are ripe, otherwise, they won’t mash very well.
  • Lime Juice – a classic tart addition to guacamole.
  • Garlic – for flavor! Grated so no one gets a huge bite of garlic.
  • Salt + Pepper – season to taste.
  • Cilantro – used as a garnish and is totally optional if you hate the taste.
  • Blue Cheese – you could also use feta or goat cheese if you don’t like blue cheese.
  • Hot Sauce – I used Frank’s Red Hot sauce, but you could use whatever hot sauce you have and/or like best.

Cook Bacon

Start by cooking bacon in a skillet until the edges are crispy. Transfer to a paper towel-lined plate. Chop into bite-sized pieces and set aside.

Mash Avocados with Other Ingredients

Cut open avocados and scoop into a large bowl. Mash together with lime juice, garlic, salt, and pepper until chunky. Stir in cilantro, tomato, blue cheese, bacon, and hot sauce. Stir until combined.

Top with Garnishes

Spoon into a serving bowl and top with more blue cheese, hot sauce, and cilantro. Serve as desired.

Perfect for big fatty Super Bowl parties, afternoon snacks, or holidays. Once my Buffalo Guacamole was all whipped up, I spooned it into a serving bowl and topped it with more blue cheese and hot sauce. So so good! And it looks pretty fancy all dolled up if I do say so myself.

Buffalo Guacamole

Ingredients

  • 4 slices hickory smoked bacon
  • 2 avocados {I used California Avocados
  • 1/2 lime juiced
  • 1/2 large clove garlic grated
  • salt & pepper to taste
  • 2 tablespoons cilantro chopped
  • 1/4 cup tomato diced
  • 2 1/2 tablespoons blue cheese crumbled (+ more for garnish)
  • hot sauce to taste

Instructions

  • Start by cooking bacon in skillet until edges are crispy. Transfer to paper towel lined plate. Chop into bite sized pieces and set aside.

  • *Refrigerate until service plus any leftovers.

    This looks yummy, but I have one word of caution for you. This is listed on your site under the Gluten Free section, but blue cheese (including gorgonzola) is not actually gluten free because the bacteria cultures that produce the blue veins in it are actually started and feed with flour and bread. It’s advised by various Celiac and Gluten Intolerance groups that people who need to be gluten free not eat it. That said, it those folks could easily substitute another cheese, like feta, and enjoy this!

    This looks absolutely amazing! Great combination of flavors! I have always been a lover of the avocado…I even made up a song about them in my teens. I was a lonely child 🙂 I still hum the song to myself whenever I eat them, which is not often since I somehow became allergic to anything with a stone/pit in it when I turned 30….the allergist says it was a hormonal thing. Such a cruel twist of fate, a lifetime of all my favorite fruits denied just when I was ready to begin my culinary adventures. Boo! I am able to eat them in very small amounts and slowly….I just need to watch for allergy symptoms. I will make this for the super bowl party, and live vicariously through others!
