Breaded Bruschetta Chicken | Better Than the Original!
I love bruschetta and I love breaded chicken so it only makes sense to put them together and serve with pasta for a tasty and light meal! Chicken tenders are coated in melted butter, bread crumbs and parmesan cheese, then baked until perfection. Added to some angel hair and then topped with tomatoes, fresh basil and lots of garlic, this will become your new favorite dinner!
Main Ingredients Needed
This recipe is a relatively healthy one that has crazy flavor. All the cheese, garlic and basil are to blame. It’s the chicken tenders that become the star of the show by getting dipped in melted butter, then breadcrumbs and cheese. They bake away in a hot oven, then get served over pasta with a bruschetta tomato topping. Simplicity at its finest! This meal certainly isn’t glamorous, but it’s really really tasty. How to Make Breaded Bruschetta Chicken
All in all, this recipe should take under an hour start to finish. The most active time you will have is breading the chicken. Once it hits the oven, you just have to cook the pasta (if you want to serve this with pasta) and make the bruschetta topping. Pretty easy!
Step 1: Bread the Chicken
Bring a large pot of water to boil. In a shallow dish or pie plate, stir breadcrumbs together with parmesan cheese, garlic salt and black pepper. In a separate bowl, melt butter.
To bread the chicken tenders, blot with paper towels and then dip in melted butter. Transfer to bread crumb mixture and press to coat the chicken. Place into a greased baking dish. Transfer chicken to a 375 degree oven uncovered and bake until golden brown and at least 165 degrees F internally.
Step 2: Cook the Pasta
If you are making pasta to go with this dinner, now would be the time to add your pasta to the boiling water. If using angel hair, your pasta should be cooked in no time! Drain, rinse briefly and then toss with 1-2 tablespoons of salted butter (or olive oil if you’d prefer). Set aside.
Step 3: Make the Bruschetta Topping
To make the yummy tomato topping, simply chop up your tomatoes, fresh basil and garlic. Toss together with olive oil and balsamic vinegar (optional, but makes a great ‘dressing’ for the tomatoes). Set aside.
Step 4: Assemble Your Breaded Bruschetta Chicken!
Once you pull the chicken out of the oven, you are ready to serve! Add some pasta to your plate, top with the breaded chicken tenders and then top generously with the bruschetta tomato topping. And that’s dinner! Yum!

Breaded Bruschetta Chicken
Ingredients
- 3/4 lb. angel hair pasta
- 1 1/2 lbs. chicken tenders
- 1 cup bread crumbs
- 1 cup grated parmesan cheese
- 2 teaspoons garlic salt
- pepper to taste
- 1/4 cup butter melted
for the bruschetta topping-
- 5 medium ‘on the vine’ tomatoes diced
- 1 small clove garlic grated
- 20 basil leaves chopped
- salt & pepper to taste
- 1 tablespoon each olive oil and balsamic vinegar optional
Instructions
- Preheat oven to 375 degrees. Spray 9×13 glass dish with non stick cooking spray and set aside.
- Bring large pot of salted water to boil. Cook angel hair pasta until al dente. Drain, coat with 1-2 tablespoons butter {if desired} and set aside.
- While pasta is cooking, rinse chicken and blot with paper towels to dry. In shallow dish, stir bread crumbs, cheese, garlic salt and pepper together. Place melted butter into a large bowl. Dip chicken pieces into the butter, then press into the bread crumb mixture. Place into greased pan. Repeat until all chicken is coated. Bake 15-20 minutes in preheated oven or until thoroughly cooked and golden brown.
- While chicken is cooking, stir tomatoes together with garlic, basil, salt, pepper, olive oil and balsamic vinegar. {I didn’t add the oil or vinegar because I ran out of both…oops. Do as I say not as I do.}
- To assemble, place buttered pasta onto a plate. Top with chicken, then tomato topping. Serve.
