Frozen sweet potato tots, tossed in cajun seasoning, is a crisp and tasty appetizer that pair deliciously with creamy cinnamon dip.
Two weeks and a day was the time allotted for my kids to be on Winter Break. That’s 15 long days we survived, folks.
My daughter and son went back to school at the beginning of the week {and I was oh so happy!} BUT then we got two feet of snow. And now it seems that time has stood still and school has been and will be canceled forevermore.
The real kicker? On Monday, my daughter’s teacher assigned “no screen or technology time” homework. No math or spelling sheets. No 20 minutes a day of reading. Just no technology. That’s all she had to do this week.
OF ALL THE WEEKS we could have gotten snow, of course it’s THIS week.
So, after 48 hours of this hot cold mess, we are running low on non-technological ideas to keep my children occupied. We’ve gone through the toys, we’ve played all the games, we’ve read all the books, we’ve gone outside a dozen times, and I refuse to bake one more thing containing calories because this mama can’t make it to the gym.
What I’m trying to say is, send help.
And by help I mean pre-made salads, 17 babysitters and a heat wave.
Lucky for me, this recipe is a teeny bit healthy.
At this point in my life, I will take vegetables in any form I can get them, including french fries, onion rings and tots.
And people wonder why I can’t lose weight.
These tots are a little healthier than {my beloved} Sonic onion rings, and you don’t have to drive through 24 inches of snow to get these either!
I created this homemade cajun mix, {because I didn’t want to shovel my driveway to go to the store,} generously tossed it onto these frozen tots that I found at the very bottom of my freezer {I’m resourceful!} and baked until crisp. Then I made a quick sweet cinnamon dip because I needed something to balance out the spice.
Lo and behold it was good. Very good.
SO good in fact that I just wrote an interesting and somewhat unrelated blog post about it.

ANYWAYS, be sure to print this recipe out and save it for later. It’s a good one!!
Hope you’re not drowning in snow like us!
Have a great weekend 🙂
