  • Frozen dinner rolls– Thaw them until soft. They flatten easily and bake up tender. I used Rhodes brand frozen dinner rolls for this recipe. If you can’t find Rhodes brand in your local grocer’s frozen bread section, your grocer may have its own proprietary brand of frozen dinner rolls. I have used Kroger brand frozen dinner rolls with great results. Also make sure you’re buying yeast dinner roll dough. You don’t want par-baked or pre-baked rolls- you won’t be able to get the mozzarella inside very easily.
  • Mozzarella cheese– Cut it into cubes so each roll gets a melty center.
  • Egg yolk– Gives the rolls a glossy, golden finish.
  • Grape or cherry tomatoes– They add that pretty wreath look once they bake and burst slightly.
  • Butter– Melted and mixed with garlic and herbs for brushing.
  • Garlic powder and Italian seasoning– Add warmth and flavor to the butter.
  • Fresh rosemary– A festive garnish that smells amazing.
  • Pizza sauce– A simple dipping option for serving. You can also use marinara sauce or additional garlic butter for dipping.

How to Make a Bread Wreath

Step 1: Preheat Oven, Prepare the Pan + Thaw Dinner Roll Dough

Preheat the oven to 350° F and line a baking sheet with parchment or grab your pizza stone. To thaw your dinner roll dough, you can place the frozen dough balls about 1/2 inch apart onto a greased or parchment-lined platter, then loosely cover with plastic wrap or parchment and allow to thaw in the fridge for 2-4 hours, or on the counter for 30-60 minutes at room temperature.

Step 2: Flatten + Fill

Press each thawed roll into a circle, add a cube of mozzarella to the center, then pinch into a ball. Be sure to pinch just the bottoms of the stuffed rolls tightly to ensure that the mozzarella is secured inside and it doesn’t ooze out while baking.

Pro Tip: Make sure not to smush the dough balls together too tightly. You want them to be just touching on the edges. This will allow the wreath to stay together but not bake into an odd shape or fall apart.

Step 3: Shape the Wreath

Place a ramekin in the center of your baking sheet, then form a ring of dough balls around it. Add the second ring of dough balls to complete the wreath.

Pro Tip: Be sure to use an oven-safe ramekin in the center of your wreath. You can also shape your wreath without it. Just beware that the dough could possibly spread while baking. You could also use a ball of aluminum foil!

Step 4: Brush + Decorate

Brush the tops with egg yolk and tuck grape tomatoes around the dough balls.

Step 5: Bake

Bake until golden, fluffy, and filled with melted cheese. Brush with garlic butter and serve warm.

Ingredients
  

  • 24 dinner rolls frozen, unbaked yeast dinner rolls, thawed
  • 8 oz mozzarella cheese cut into 24 one-inch cubes
  • 1 egg yolk beaten, for brushing overtop
  • 25 grape tomatoes approximately, for decorating

for the garlic butter-

for serving-

  • rosemary fresh, for garnish (or thyme or sage)
  • pizza sauce optional, for dipping

Instructions
 

  • Preheat oven to 350° F. Line a large baking sheet with parchment (or use a pizza stone).
  • Gently flatten each thawed dinner roll into a circle roughly 4-inches in diameter and 1/2 inch thick.
  • Place a cube of mozzarella directly in the center of each circle, then bring the dough around the mozzarella into a ball, pinching the bottom inward.
  • Place a small ramekin in the center of your pizza stone or baking sheet, then arrange 8 stuffed dough balls seam side down around the outer edge of the ramekin in the shape of a wreath.
  • Arrange the remaining 16 stuffed dough balls in a second layer around the first circle of dough balls.
  • Brush the tops of the dough with a thin layer of egg yolk.
  • Arrange the cherry tomatoes in bunches over the rolls to resemble holly berries or ornaments.
  • Bake for 20-25 minutes, or until the rolls are golden brown and baked through, the cheese is melted inside, and the cherry tomatoes are juicy and nearly bursting.

for the garlic butter-

  • Combine the melted butter, garlic powder, Italian seasoning, salt, and black pepper in a small bowl.
  • Brush the tops of the warm dinner rolls with the garlicky herb butter.

for serving-

  • Garnish with fresh sprigs of rosemary (or herb of choice) and serve warm with warmed pizza sauce, marinara, or more garlic butter in the ramekin in the center of the wreath, if desired.

Notes

Storage Instructions

To refrigerate- Keep leftovers covered in the fridge for up to 2 days. Reheat at 325° F, covered with foil, in the oven until warmed through.
To make ahead- Assemble the stuffed rolls and shape the wreath, then cover tightly and refrigerate for up to 12 hours. Add the egg wash and tomatoes right before baking.
To freeze- Freeze the assembled, unbaked wreath on a sheet pan until firm, then wrap well and freeze for up to 2 months. Thaw in the fridge, add the egg wash and tomatoes, and bake as directed.
