Chicken Parm Garlic Bread Burgers

Have I got an amazing burger for you! Like, knock your socks off totally delicious.

I love a good burger. I don’t think there’s another food out there that can hit the spot quite like a burger can on a hot summer evening. This burger plus a side salad, some bbq chips and a diet coke made me a very happy woman last week.

Ok, let me break this recipe down for you. {It’s hard to tell what is going on with all that melted ooey gooey cheese up on top of that chicken!}

Take some chicken breasts and pound them out so they are all of even thickness. Rub on some garlic salt, pepper and olive oil and grill. Once you flip them, top with lots of marinara, mozzarella and parmesan. {Don’t skimp on the cheese!} Toast up some kaiser rolls, spread with butter and rub with a garlic clove. {Don’t skimp on the butter!} Put the chicken ‘patty’ on the warm & toasty garlic bread and top with more marinara and fresh basil. {Don’t skimp on the marinara!}

I’m not gonna lie. I thoroughly enjoyed every last bite of this burger. And so did my husband. I even made more garlic bread rolls that evening for a snack. Yeah, I haven’t been able to stop thinking about that.

Seriously.

If you’ve never had toasted bread of any kind slathered with hideous amounts of butter and then rubbed with garlic you haven’t lived.

Amen.

Basically, this burger made my life last Thursday night and it quite possibly could make yours.

Chicken Parm Garlic Bread Burgers

Servings 4 burgers

Ingredients

  • 4 chicken breasts {boneless & skinless}
  • 2 tablespoons olive oil
  • 2 teaspoons garlic salt
  • 1 teaspoon black pepper
  • 4 thick slices mozzarella cheese
  • 1/2 cup freshly grated parmesan cheese {you'll want the real stuff so it will melt!}
  • 1 cup good marinara sauce
  • 4 fresh kaiser rolls {you want soft and chewy rolls}
  • 8 tablespoons butter
  • 1 large clove garlic peeled

Instructions

  1. Preheat outdoor grill to high.
  2. Pound out chicken breasts so they are of even thickness. Rub with olive oil, garlic salt & pepper. Lightly grease grill. Place chicken breasts onto hot grill and reduce heat to medium. Cover and cook 5 minutes. Remove lid and flip chicken breasts. Top each piece of chicken with 2 tablespoons marinara each, 1 slice of mozzarella and 2 tablespoons parmesan. Place split kaiser rolls cut side down on grill. Replace lid and cook 1-2 minutes.
  3. Remove kaiser rolls when golden brown. Spread 1 tablespoon butter on each cut side of roll and rub generously with garlic clove, cut side facing the bread.
  4. Remove chicken after another 3-5 minutes or until thoroughly cooked.
  5. Place chicken in between garlic bread bun, top with more cheese, marinara and freshly torn basil, if desired. Serve immediately.
