A healthy and delicious Thai Peanut Chicken Salad made with kale! Lots of veggies, a simple dressing all put together in a jiffy.
Today, I’ve partnered with The Good Table to bring you a delicious and healthy side dish recipe for your perfectly seasoned chicken dinner. The Good Table is a new product line from General Mills and offers families gourmet-style sauce and crust mixes for chicken and fish.

Not only do you get amazing flavors from the chicken and the salad, but both are simple to prepare.
I love making dinnertime adventurous for my little family. I always try to incorporate new flavors weekly to expand and broaden their little 2-and 6-year old palates. Recently, while Brooke was at school {and literally the day before I gave birth to Eddie}, Gord and I took Blake to a Thai grocery store to explore and get inspiration for this Thai dinner. I figured if Blake {my pickier eater} helped us pick up the veggies we needed for the dinner, he was more likely to try it. And, believe it or not, it worked!
Once we had our groceries, we headed home and made this Crunchy Thai Peanut Chicken & Kale Salad. Here’s how to make it:
For the chicken, start out with a package of this Crunchy Thai Peanut mix from The Good Table.
Inside is your garlic sauce and your coating. So, dip each piece of chicken into the sauce and then the peanutty coating.
Stick your chicken pieces into the oven and bake 🙂
Meanwhile, get some ingredients for your dressing together: oil, garlic, soy sauce, rice wine vinegar, brown sugar, sesame oil, ginger and lime!
As for veggies: wash and chop 1 bunch of kale. Then add on some chopped red bell pepper, rainbow carrots, cilantro, thai basil leaves and peanuts {or cashews if you’re in a pinch}.
Pour over half of the dressing and toss. If you think you need more, then add more as desired.
Once everything looks good and coated, divide salad onto plates.
Slice up your chicken…
and serve! I added some avocado to the salad as a garnish along with more cilantro and thai basil {see top photo}, but that step is completely optional. This dinner is delicious either way!

Crunchy Thai Peanut Chicken Salad
Ingredients
- 1 bunch kale washed and chopped
- 1 red bell pepper chopped
- 1/2 cup dry roasted peanuts or cashews, chopped
- 8 oz. rainbow carrots julienned
- 1/2 bunch cilantro chopped
- 0.75 oz thai basil
- 1 ripe avocado sliced
for the dressing:
- 1/4 cup light olive oil
- 3 cloves garlic minced
- 3 tablespoons soy sauce
- 2 tablespoons water
- 2 tablespoons rice wine vinegar
- 3 tablespoons brown sugar
- 1 tablespoon sesame oil
- 1 tablespoon ginger paste
- 1 lime juiced
- salt & pepper to taste
Instructions
- Place all ingredients for salad into large bowl. Set aside.
- For the dressing, measure all ingredients into a liquid measuring cup and whisk together to emulsify.
- Toss half the dressing with salad and coat evenly. Add more dressing as desired. Serve with slices of Crunchy Thai Peanut Chicken.
