This recipe is super healthy because it’s made with white meat chicken, non fat greek yogurt and….are you ready for this? Zucchini!

Sounds weird but oh my heavens is it delicious.

Healthy Chicken Salad

This Healthy Chicken Salad is delicious because it’s made with white meat chicken, non-fat greek yogurt, and zucchini. Enjoy with crackers or in a sandwich.

Ingredients

  • 1 small zucchini finely grated and wrung out
  • 2 large stalks celery finely chopped
  • 1/2 small onion finely chopped
  • 2 cans chicken drained, I used 2-12.5 oz. cans
  • 1/3 cup nonfat greek yogurt
  • 1/4 real mayonnaise
  • salt & pepper to taste

Instructions

  • Place all ingredients into bowl and stir until combined. Taste, adjust seasonings and serve as desired. I LOVE dipping crackers into this little concoction. Cover and store in refrigerator for up to 5 days {these covered bowls are GREAT for this}.

    I thought it was a little bland for my taste, but nothing that couldn’t be adjusted with some salt, pepper, dill and celery seed lol. The zucchini is a great addition, never would have thought of that, and I like the idea of lightening it up with the yogurt.

    I too cannot read anything you post on feedly. I seriously had a dream about your blog and this morning I thought MAN I have not seen her post in almost a month. SO I came to your website and you’re PREGNANT! haha. CONGRATS!!!!!!! I have 3 kiddos and love it. Good balance.
    But like Summer said, so many posts are missed. Feedly for some reason has your last post as of July 16th. Maybe you need to check with them?
