Macro Friendly Gyro Bowls

Love gyros? Try this Gyro Bowl with a homemade greek yogurt tzatziki! I'd highly recommend adding fresh mint! It makes a big (delicious) difference.

Ingredients
  

For the Tzatziki

  • 1 cup nonfat plain greek yogurt I used Fage 0%
  • 1/2 cup finely diced cucumber
  • 1 clove garlic minced
  • 1 tablespoon fresh mint chopped
  • 1 tablespoon fresh dill chopped (or use 1 teaspoon dried)
  • 1 1/2 tablespoons lemon juice
  • salt & pepper to taste

For the Gyro Bowls

  • 1 pound Seasoned Rotisserie Chicken boneless, skinless (I used Walmart brand)
  • 1 cup sliced cucumber
  • 2 cups grape tomatoes halved
  • 1 cup fat free feta cheese
  • salt & pepper to taste

Instructions
 

  • In a small bowl, stir yogurt, cucumber, garlic, mint, dill, lemon juice and salt and pepper together to create tzatziki sauce. Taste and adjust seasoning. You many like to add more lemon juice, garlic, salt or pepper to make it how you'd like it. Set aside.
  • To create the Gyro Bowls, divide chicken into 4 oz portions and onto plates or into bowls. Top with cucumber, tomatoes and 1/4 cup feta cheese. Top with tzatziki sauce (about 1/4 cup each). Top with more fresh mint, salt and pepper and serve with pita or pita chips.
