Macro Friendly Hamburger Soup
This humble and simple Hamburger Soup recipe is the perfect comforting dinner or quick weeknight meal. Filled with ground beef and veggies with a hearty and flavorful broth.
Ingredients
- 1 small onion diced
- 1 pound extra lean ground beef 94/6
- 2 medium potatoes peeled and diced
- 2 large carrots peeled and diced
- 4 cups beef broth
- 1 cup tomato sauce 8 oz can
- 2 whole bay leaves
- 1 1/2 teaspoons garlic powder
- 1/2 teaspoon Italian seasoning
- salt and pepper to taste
- 1 1/2 cups broccoli florets
Equipment
- Large saucepan or dutch oven
Instructions
- Spray large pot with nonstick cooking spray. Saute onion for 2 minutes before adding in ground beef. Break meat apart as it browns.
- Once onions are soft and meat has browned, stir in potatoes, carrots, beef broth, tomato sauce, bay leaves, garlic powder, Italian seasoning, salt and pepper. Bring to boil then reduce to simmer for 15 minutes.
- Stir in broccoli and cook another 10 minutes or until broccoli stems are tender. Serve.
