How to Ripen the Perfect Avocado
Making sure your avocados are the perfect ripeness can be tricky. Place the avocado in a brown paper bag with an apple or banana. These fruits release ethylene gas, which helps speed up the ripening process. Leave the bag at room temperature, and your avocado should ripen in 1-2 days. If you’re not in a hurry, just leave the avocado on your kitchen counter at room temperature. It will ripen naturally in 4-5 days. There are quicker microwave and oven methods for ripening an avocado immediately, but I haven’t tested those methods, and honestly with a fresh dressing like this – it just doesn’t sound appealing to me.
How To Make Avocado Salad Dressing

1. Combine Ingredients
In a mini food processor or small blender, combine mayonnaise, ripe avocado, fresh lemon juice, minced garlic, salt, and black pepper. Blend until smooth.
2. Add in Olive Oil
Slowly stream in olive oil until the dressing reaches your desired consistency. If you like it thinner, add a bit more.
3. Serve
Serve immediately or chill in an airtight container for later. You can use this creamy avocado dressing right away, or store it in the fridge.
Storage + Make Ahead Directions
Store in mason jars or any airtight container, covered with a piece of plastic wrap to prevent browning. Be sure to place the plastic wrap directly on the dressing. Keep it chilled and use it within 1-2 days for the best flavor. You can also save one of the avocado pits and throw that right in the jar. That can help give it a little more longevity.
I don’t recommend freezing this salad dressing. The texture would be grainy and just not the same with brown avocado. Use it fresh!
To Make Ahead: Since this dressing is best used within a day or 2 of making it, you can make it ahead within that time frame. Give it a good stir before using.

Avocado Salad Dressing
Ingredients
- 1/4 cup mayonnaise
- 1 avocado ripe
- 1 lemon juiced
- 1 clove garlic minced
- salt to taste
- black pepper to taste
- 1/4 cup olive oil give or take

- In the bowl of a small food processor or small blender, place mayonnaise, avocado, lemon juice, garlic, salt and black pepper. Blend until smooth.

Oh my. Saw this 2 weeks ago and I said to myself, make this!! So, after a 11 hour work day I just did it. 10 minutes tops. Used my stick blender. . . Ran short of my “plastic” lemon juice so finished it off with some lime. Extra garlic from a jar and some no salt seasoning. . .onion powder, lots of pepper!! Very thick, so added the gluggs of olive oil. Out of this world delicious. Salad dressing? My original idea. Now it will be the glue for a BLT tomorrow. Still kind of a salad, right? Make this,it is awesome!

I just made this an put in the fridge to chill for my dinner salad. It is divine. The only thing I did differently is use cracked lemon pepper instead of regular cracked pepper. You use what you have on hand, right? Anyways, thanks for the recipe.

I made this for the first time last night – didn’t have any fresh lemons but I had fresh limes so I used lime juice instead and it was to die for! I also make my own mayo and used that instead of store bought. I refuse to use store bought salad dressings and always make my own but hadn’t found a creamy dressing I liked – not any more! This will be a staple in my kitchen!
I just made this and it is beautifully green and delicious. A whole lemon was too much for me tho. That was a lot of juice! I’d do half a lemon next time and I added some parmesan cheese too. That was a REALLY good decision 🙂

This looks amazing. I want to make it to use on my lunch salads this week. Does it keep well in the fridge or will it oxidize like avocados tend to? I am guessing the lemon will help, but just wanted to check to see how far ahead of time I can make it without it turning an unpleasant brown.
