Ingredient Notes

Here’s a quick look at what you’ll need to make these asparagus puff pastry bundles.

  • Frozen puff pastry: Thaw the puff pastry according to the package directions so it’s easy to roll and shape.
  • Asparagus spears: Trim off the woody ends to leave tender asparagus for the bundles.
  • Pancetta: Thinly sliced pancetta adds a salty, savory bite that pairs really well with the asparagus.
  • Gruyère cheese: Shredded Gruyère melts beautifully and adds a rich, nutty flavor.
  • Egg + Water: Beat the egg with water to make an egg wash that gives the pastry a pretty golden finish.
  • Olive oil: A light drizzle adds a little extra flavor to the asparagus.
  • Black pepper: Freshly ground black pepper adds a simple kick and brings all the flavors together.
  • All-purpose flour: Use a little flour on your work surface to keep the puff pastry from sticking as you roll it out.

How to Make Asparagus Puff Pastry Bundles

Flaky puff pastry, melty Gruyère, savory pancetta, and tender asparagus make these bundles simple and delicious. Here’s how to make them:

Step 1: Prep the Oven and Asparagus

Preheat the oven to 400°F and line a large baking sheet with parchment paper.

Add the asparagus to a large bowl, drizzle with olive oil, season with black pepper, and gently toss to coat.

Step 2: Roll and Cut the Puff Pastry

Lightly flour your work surface and unfold the thawed puff pastry. Gently roll it into a 12-inch square, then cut it into 8 equal squares.

Pro Tip: Keep the puff pastry chilled until you’re ready to work with it. If it starts feeling too soft or sticky, pop it back in the refrigerator for a few minutes.

Step 3: Layer the Filling

Place one pastry square in front of you with a corner pointing toward you. Sprinkle about 2 tablespoons of Gruyère diagonally across the center.

Place a few slices of pancetta directly on top of the cheese, then lay 3 asparagus spears over the pancetta, with the tips extending slightly past the edge of the pastry.

Step 4: Fold the Pastry

Bring the bottom corner of the pastry up and over the asparagus and filling. Lightly brush the folded corner with water. Bring the opposite corner over the top and gently press the two corners together to seal. Place the bundle seam-side up on the prepared baking sheet. Repeat with the remaining pastry and filling.

Step 5: Add the Egg Wash

Whisk the egg and 1 tablespoon of water together in a small bowl. Brush the exposed puff pastry generously with the egg wash.

Step 6: Bake Until Golden

Bake for 18–22 minutes, until the puff pastry is deeply golden and puffed, the cheese is melted, and the asparagus is tender.

Step 7: Cool and Serve

Let the bundles cool on the baking sheet for about 5 minutes, then serve warm.

Make Ahead Tip: Assemble the bundles a few hours ahead and keep them covered in the refrigerator until ready to bake. Brush with the egg wash just before baking for the best finish.

Tips for Success

A few simple tricks will help these asparagus bundles bake up golden and flaky.

  • Chill before baking: Refrigerate the assembled bundles for 10–15 minutes before baking. Cold pastry puffs up better and gives you a flakier crust.
  • Don’t overfill: Too much filling can make the pastry hard to seal and cause the cheese to leak out. Keep everything in a neat line through the center.
  • Use asparagus that’s similar in size: Spears that are close in thickness will cook more evenly, so the pastry and asparagus should finish at about the same time.
  • Press the pastry closed: Make sure the folded corners are sealed well so they stay together as the pastry puffs in the oven.
  • Don’t stretch the pastry: Gently roll and fold it instead of pulling it into shape. Stretching can make the pastry shrink back in the oven.
  • Give them space: Leave a little room between each bundle on the baking sheet so they brown evenly, and the pastry has space to puff.

What to Serve With Asparagus Puff Pastry Bundles

These asparagus bundles make a great side dish, especially alongside a simple main course. Here are a few easy pairings to round out the meal.

  • Baked Salmon: Tender salmon adds a lighter main dish next to the rich, cheesy bundles.
  • Garlic Butter Shrimp: Garlic butter shrimp brings plenty of flavor without overpowering the asparagus.
  • Roast Chicken: Juicy roast chicken makes the bundles part of a hearty, satisfying dinner.
  • Remoulade Sauce: Creamy, tangy remoulade adds a nice contrast to the rich pastry and cheese.
  • Quiche: A savory quiche rounds out the meal with more egg, cheese, and vegetable flavors.

Ingredients

  • 1 sheet frozen puff pastry thawed according to package directions
  • 24 thin asparagus spears woody ends trimmed
  • 4 ounces pancetta thinly sliced
  • 4 ounces Gruyere cheese shredded
  • 1 large egg
  • 1 tablespoon water
  • 1 tablespoom olive oil
  • 1/4 teaspoon black pepper
  • all-purpose flour for rolling

Instructions

  • Preheat oven to 400°F. Line a large baking sheet with parchment paper.
  • Place the asparagus in a large bowl. Drizzle with olive oil, sprinkle with black pepper, and toss gently to coat. Set aside.
  • Lightly flour a clean work surface. Unfold the thawed puff pastry and gently roll it into approximately a 12-inch square.
  • Cut the puff pastry into 8 equal squares.
  • Place one pastry square on the work surface with a corner pointing toward you. Add about 2 tablespoons of shredded Gruyère cheese diagonally across the center.
  • Top the cheese with a few slices of pancetta and 3 asparagus spears, positioning the asparagus so the tips extend beyond the pastry.
  • Fold one corner of the puff pastry over the filling. Brush the top lightly with water, then fold the opposite corner over it and gently press to seal. Transfer seam-side up to the prepared baking sheet.
  • Repeat with the remaining puff pastry, Gruyère, pancetta, and asparagus.
  • In a small bowl, whisk together the egg and 1 tablespoon water to make an egg wash.
  • Brush the exposed puff pastry generously with egg wash.
  • Bake for 18–22 minutes, or until the puff pastry is deeply golden and puffed, the cheese is melted, and the asparagus is tender.
  • Let cool on the baking sheet for about 5 minutes before serving. Serve warm.

Notes

Use thin asparagus: Thin to medium asparagus spears should become tender in approximately the same amount of time it takes the puff pastry to bake. If using very thick asparagus, blanch it briefly before assembling the bundles.
Keep the puff pastry cold: Puff pastry rises best when it stays cold. If the pastry becomes very soft while assembling the bundles, place the assembled bundles in the refrigerator for 10–15 minutes before baking.
Pancetta: Thinly sliced pancetta works best because it can cook through during the relatively short baking time. If using diced pancetta, cook it in a skillet first and drain before assembling.
Don’t add extra salt: Pancetta and Gruyère are both salty, so the bundles shouldn’t need additional salt.
Make ahead: Assemble the bundles, cover, and refrigerate for a few hours before baking. Brush with egg wash just before they go into the oven.

Variations

A few easy swaps can change up the flavor while keeping the same simple assembly.

  • Swap the cheese: Try white cheddar, Parmesan, or Brie in place of Gruyère.
  • Use bacon: Replace the pancetta with thinly sliced bacon for a smoky flavor.
  • Make them vegetarian: Leave out the pancetta and add a little extra cheese.
  • Add Dijon: Spread a thin layer of Dijon mustard over the pastry before adding the cheese for a little extra tang.

Storage and Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days.

To reheat, place them in a 350°F oven or air fryer for 5–10 minutes, until warmed through and the pastry is crisp. Avoid the microwave, as it can soften the pastry.

Freezing isn’t recommended since the pastry and asparagus may lose their texture.
