Looking for the easiest way to turn your leftover turkey into something crave-worthy? These buttery, golden puff pastry pockets are stuffed with turkey, cranberry sauce, and cream cheese for the ultimate snack or quick meal. These Turkey Hand Pies bake up fast, look fancy without the effort, and taste like you spent way more time on them than you did.

Ingredient Notes + Variations
These turkey hand pies come together with just a handful of ingredients, which is why each one needs to bring big flavor. Here’s what you’ll need:
- Puff pastry – Store-bought keeps this quick and easy. Thaw before using so it’s pliable but still cold.
- Cooked turkey – Shredded or chopped, white or dark meat. Use up that leftover Thanksgiving turkey or even rotisserie chicken.
- Cranberry sauce – Adds a sweet-tart pop that pairs perfectly with turkey. Store-bought or homemade cranberry sauce both work here.
- Cream cheese – Gives the filling a creamy, rich texture.
- Egg wash – Brushed on top for that golden, glossy finish.
- Salt + black pepper – Season to taste so the filling isn’t bland.

This recipe looks great, however I think the puff pastry should be cut into squares not rectangles. I don’t think you can fold a rectangle to form a triangle.
