Cadbury Egg Rice Krispies are soft, chewy marshmallow treats shaped like Easter eggs and packed with crunchy Cadbury Mini Eggs. Extra marshmallows stirred in at the end keep the texture perfectly gooey, while the candy adds little pops of chocolate in every bite. They are festive, easy to make, and perfect for Easter baskets or dessert trays.

Ingredient Notes

  • Cadbury Mini Eggs– The star of the show. Cut them in half so the chocolate spreads throughout the mixture. Save a small handful for pressing into the outside if you want a prettier finish.
  • Butter– Salted or unsalted both work. Butter adds richness and helps the marshmallows melt smoothly.
  • Mini Marshmallows– Dividing the marshmallows is the secret here. Some melt completely while the rest soften slightly and create those gooey pockets everyone loves.
  • Rice Krispies Cereal– The classic choice for structure and crunch.

How to Make Cadbury Egg Rice Krispies

These Cadbury Egg Rice Krispies come together quickly. Melt, stir, shape, done. For full recipe details, including ingredient measurements, see the printable recipe card down below.

1. Prep Pans + Rubber Spatula

Line a sheet pan with parchment paper or wax paper. Spray a large pot and a rubber spatula with nonstick cooking spray.

2. Melt Butter + Mini Marshmallows

Place pot over medium heat and melt butter. Pour in 10 oz bag of mini marshmallows and stir to coat in butter. Continue stirring until marshmallows have melted completely. Remove from heat.

3. Add in Rice Krispies + Remaining Marshmallows

Pour in crispy rice cereal and stir to coat in melted marshmallow mixture. Once mostly coated, stir in the remaining 5 ounces of marshmallows. They will melt slightly from the heat, but not completely which is what you want. Also add in Cadbury Mini Eggs and stir until combined well.

Pro Tip: You need to work very quickly in this step or the mini Cadbury eggs will melt everywhere and make for a not so pretty Rice Krispies treat. You want them to stay in tact. Alternatively, you can save a handful of the candies and place strategically on the outside of each Rice Krispie egg.

4. Form Egg Shapes + Allow to Cool

Using lightly greased fingers, take a handful of the mixture and form into Easter Eggs. Place on baking sheet to set and cool. Allow to cool completely before moving them to serve or store.

5. Add Extra Mini Eggs to Outside of Eggs (optional)

If you saved some of the Cadbury mini eggs, strategically place them all around the egg treat for a nicer presentation. Other cute ideas would be jelly beans or chocolate robin eggs.

Tips for Success

  • Use fresh marshmallows- trust me, you’ll thank me later.
  • Work quickly once the cereal is added so the mixture stays easy to shape.
  • Lightly grease your hands before shaping to prevent sticking.
  • Cut the Cadbury Mini Eggs in half for better distribution in the mixture.
  • Add the candies right before shaping so the chocolate holds its shape.
  • Use a plastic easter egg as a mold to shape your eggs. I suggest washing/drying them, then spray with non stick spray. Let them cool in the eggs before gently removing.
  • Press a few extra candies on top for a colorful finish.

Storage Directions

Store Easter rice krispie eggs in an airtight container at room temperature for up to 3 days to keep them soft and chewy. If stacking, place parchment paper between layers so they don’t stick together. Freezing is not recommended since the cereal texture softens after thawing.

Variations

  • Chocolate Drizzle: Add a melted chocolate drizzle on top for extra decadence. I like using different colored candy melts or melting white chocolate chips for this!
  • Nutty Twist: Incorporate chopped nuts for a crunchy variation.
  • Fruity Flavors: Mix in dried fruit for a burst of sweetness.
  • Swap Candy: Instead of Cadbury Eggs, use any Easter candy of your choice.
  • Sprinkles: Add Easter sprinkles or jimmies.
