Roasted Green Beans | An Easy, Healthy Side Dish

I love roasting vegetables. While I tend to gravitate towards always steaming my broccoli, boiling and mashing my potatoes or just making a salad, roasting things you normally wouldn’t think to roast (like green beans!) is a yummy way to enjoy them! Simply toss your prepared beans in olive oil, salt and pepper and place into a hot oven to roast. Roasted Green Beans will become your new favorite side dish!

Main Ingredients Needed

You don’t need much to make roasted green beans. Three ingredients, some baking time and you’ve got a tasty side dish. Here’s what you need:

  • Green Beans – the main star of the show! Be sure to use fresh green beans for the best results.
  • Olive Oil – this helps the green beans roast to perfection.
  • Salt + Pepper – for simple but effective flavor.

Variations to Roasted Green Beans

This is the basic outline of perfectly roasted green beans however, that doesn’t mean you can’t customize this recipe to suit your liking! Here are a few ideas:

  • parmesan
  • garlic
  • lemon juice
  • red pepper flakes
  • Italian seasoning
  • cajun seasoning

Can I Use Haricots Verts For This?

Yes, you can! Haricots Verts are basically thin green. (The French words Haricots Verts literally translates to ‘beans green’). Because they are thinner, they will cook quicker, so while the preparation remains the same, the cooking time should be cut in half. Of course cook them to your liking, but you’ll want to check on them sooner than later.

How to Roast Green Beans

Step 1: Preheat Oven

Preheat oven to 400 degrees. Line a baking sheet with parchment paper and set it aside.

Step 2: Prep Green Beans

Prep the green beans by washing, drying, and trimming the ends. Place onto the prepared baking sheet. You can buy packaged green beans that come ready to go, but I like to wash them all and double check there aren’t any bad ones in the bunch. Drizzle with olive oil, then sprinkle with salt and pepper. Toss to coat evenly.

Step 3: Bake

Bake until roasted to your liking. Serve warm.
