I asked on Facebook what kinds of recipes you wanted to see on the blog and ice cream made with no ice cream machine was at the top of the list. So, here’s a fabulous recipe for No Churn Rocky Road Ice Cream. It’s so ridiculously easy to make that you’ll be making seventy million batches this summer. Just wait and see. You will.

So, what’s in rocky road ice cream? The classic answer is chocolate, nuts, and marshmallows and although this recipe is pretty basic, you can customize it how you like it. Here’s what you’ll need:

  • Heavy Whipping Cream – make sure you get the HEAVY Whipping Cream as opposed to just regular whipping cream. This is to ensure that the fat content is correct for freezing.
  • Sweetened Condensed Milk – this gives a ton of sweet flavor and helps with the texture.
  • Vanilla Extract – for flavor.
  • Chocolate Syrup – this is drizzled while being layers and creates the ribbons of chocolate seen in the photos.
  • Mini Marshmallows – another classic ingredient. Rocky road wouldn’t be rocky road without marshmallows.
  • Toasted Almonds – I love to toast my almonds before mixing them in to add a different type of flavor to the whole thing.

Variations

As with all of my recipes, adapt, and adjust as necessary. This Rocky Road Ice Cream Recipe is really forgiving. Here are a couple of variation ideas:

  • Nuts: if almonds aren’t your thing feel free to sub in another type of nut. Walnuts, pecans, and even peanuts work.
  • Marshmallows: instead of putting in mini marshmallows, consider heating up some marshmallow fluff and swirling it in for a different type of ribbon.
  • Chocolate: try dark chocolate syrup or even use chocolate chips!
  • Ice Cream: you don’t have to stick with the vanilla ice cream I made, try making it chocolate by mixing in some chocolate syrup to the base.

How to Make Rocky Road Ice Cream

Homemade ice cream is always a good idea! So here is how to make homemade rocky road ice cream without an ice cream maker:

  1. Start by preheating your oven and toasting some sliced almonds.
  2. While almonds are toasting whip heavy whipping cream, sweetened condensed milk, and vanilla until combined and light and fluffy! {I could eat this with a spoon, ya’ll}
  3. Pour about half the cream mixture into the bottom of a huge plastic container and spread out evenly.
  4. To that, drizzle some chocolate syrup and sprinkle toasted almonds and mini marshmallows on top.
  5. Swirl it all in and do it all again! Cream! Goodies! Swirl! Once everything is swirled, cover and freeze!
  6. And voila! Hours later, you have ice cream! Hot diggity dawg.

Once you’re ready to serve, pull your container of ice cream out of the freezer and let it sit out 10 minutes or so. It’ll make it easier to scoop 🙂

No-Churn Rocky Road Ice Cream

No churn Rocky Road Ice Cream is filled with toasted almonds, marshmallows, and ribbons of chocolate syrup. Plus no ice cream machine needed!

Ingredients

  • 4 cups heavy whipping cream
  • 1 can sweetened condensed milk
  • 1 tablespoon vanilla extract
  • 1 cup chocolate syrup divided
  • 1 cup mini marshmallows divided
  • 1/2 cup toasted almonds divided

Instructions

  • Preheat oven to 350 degrees. Lay almonds on a baking sheet in one even later. Toast for 4-5 minutes.
  • In a large bowl, whip cream, sweetened condensed milk and vanilla until it holds it's shape; 3-5 minutes of whipping. You don't want a super stiff peak, but you don't want a super soft peak either. Somewhere in the middle is fine.
  • In a 10-cup plastic container, spread about half of the cream mixture across the bottom. Top with half of the toasted almonds, chocolate sauce and mini marshmallows. Using a butter knife, swirl ingredients into whipped cream. Repeat, creating a second layer on top of the first with remaining cream, toasted almonds, chocolate sauce and mini marshmallows. Cover and freeze 8-12 hours or until solid.
  • Pull ice cream out 10-15 minutes before serving. Scoop into servings and enjoy!

    This looks so great! My kiddos have a day off on Monday and this would be a fun treat. I just want to double check on the amount of heavy whipping cream though…4 quarts equal a gallon and the seems like a lot…. Let me know though and I’ll be running out to gather up what I need! 🙂
