Mini Chocolate Chip Cookie Ice Cream Sandwiches

IMG_0350Over the weekend, my husband was at his drill with the National Guard.

He was gone, therefore I went shopping…for nothing all that exciting, unfortunately. Clothes for Brooke. Shoes for Brooke. Dance attire for Brooke.

Do you see a theme emerging here? Geeze Louise.

Once we got back from that 5 hour excursion, I fed the kiddies, put them to bed and started browsing Netflix. I’ve already watched the entire seasons of Monk, Dawson’s Creek and Felicity and was in dire need of a new show to start obsessing over watching.

You guys, I’ve jumped aboard the Friday Night Lights train. Please tell me you know and love that show?!?!

After staying up way later that anticipated watching the first 6 episodes {whilst cleaning out my pantry}, I’ve made some observations:

1. There are some seriously good looking people attending that high school.

2. Umm, why were none of those guys ever at MY high school? SERIOUSLY.

3. I heart Coach Taylor. He’s a good guy. I also like his wife. Their relationship is presh.

4. Still don’t get why people like football as a sport, but whatevs.

5. I now understand the Tim Riggins thing. #holyhannahmontanaheisspicyhot

6. I blame MariaAli and lots of my other blogging friends.

So, yes. I will be discussing this show for the next few weeks as I finish the series. It should probably take me two weeks.

Just kidding.

8 days is more like it.

IMG_0355ANYWAYS. While I was watching said show cleaning out said pantry, I got hungry and fixed me a snack. These little Mini Chocolate Chip Cookie Ice Cream Sandwiches. Aren’t they cute? I used crunchy mini chocolate chip cookies from trader joes, breyers vanilla bean ice cream and some random sprinkles I found in my pantry–>it pays to clean.

I made a bunch of these little dudes, had a few, proceeded to eat them all, made some more and then shared them with my daughter the next day.

The perfect little treat that is seriously the perfect size for kids. How cute would these be at a kids’ birthday party?

IMG_0346I didn’t bother doing step by step photos because these are so simple to make. And, I assume you all know how to scoop ice cream and open a jar of sprinkles. Anyways, try these out on your kids and see how fast their eyes pop out of their heads. It’s a fun little game to try. Happy Monday!

Mini Chocolate Chip Cookie Ice Cream Sandwiches

Such a cute little treat for little hands. Perfect party food!

Prep Time 1 hr
Total Time 1 hr

Ingredients

  • 12 mini chocolate chip cookies
  • 2 cups vanilla ice cream
  • colorful sprinkles

Instructions

  • Using a 2 teaspoon cookie scoop, scoop ice cream balls onto one mini chocolate chip cookie, topping with a second one. Press down slightly. Repeat with as many as you'd like. Freeze 30 minutes. Remove from freezer and roll edges in sprinkles. Freeze until you're ready to serve.

    I am so glad that I am not the only one that loves obsessing over show series on Netflix. I love getting caught up in a show and watching the entire season. I loved Weeds and 24. I never watched Friday Night Lights, but I may have to start. I’ve heard nothing but good things about it.

    We are going through How I Met Your Mother on Netflix and just discussed the other day how after we’re done, Friday Night Lights is next! 🙂

    But, seriously, if you haven’t watch HIMYM, you MUST make that your next series. It’s HILARIOUS.
