I’m exhausted. There are so many things racing through my mind it’s a little ridiculous.

I thought writing them all down and organizing my thoughts would help the cause…..not so. It kinda sorta made it worse. How’s that for a nice kick in the pants? I’m exhausted just thinking about everything I have to do in the next 48 hours. Care to know what’s on my list? You’re going to wish you hadn’t asked.

What’s that? You didn’t ask? Well tough toots. Get comfy cause it’s coming:

-go running with my friend in the cold cold rain tomorrow morning at 5-effing-thirty.

-get my kids up and dressed.

-feed breakfast to said kids.

-make preschool lunch.

-take daughter to preschool.

-go to zumba {because I like zumba}

-go see Turk

-pick daughter up from preschool

-shower and dress myself {That’s right, I’m around town in my own sweat and filth until 11:30 when I pick my daughter up from preschool. Don’t judge me.}

-Eat lunch

-Put baby down for nap

-Start load of laundry and hope it dries fast

-Pack newly cleaned *hopefully dry clothes into suitcase

-drive to airport

-get on airplane

-fly to LA

-meet friend at airport

-go to hotel room with said friend

-sleep and sleep and sleep

-wake up early to exercise

-shower and eat breakfast

-go to important dr.’s appointment with said friend

-do touristy stuff for like, 2 hours

-drive to airport

-get on airplane

-land in Portland

-drive home

-put kids to bed

-sleep and sleep and sleep

I neglected to mention that I need to finish 2 blog posts, edit a few photos and test a recipe as well sometime in this 48 hour window too. #thisismylife

ALSO, how did I not know the Oscars like, just happened. I’m not THAT much of a hermit am I? AM I?

That’s a rhetorical question.

Maybe at the airport I’ll look up people.com to figure out who won what….not that I’ve seen any of the nominated movies. That’s not important.

Still denying the fact that I’m a hermit.

So lucky me, I get to think about all this fun stuff. Maybe I should take up yoga or something. I could squeeze a little meditation into my day somewhere…maybe.

Anyways, as usual, my amazing recipe has nothing to do with anything. Other than the fact that I made it, tried it and hid the rest in the fridge so no one else could have any. Incase you were wondering, this dip is holy-guacamole-good. Did I mention this dip is just black beans and veggies? WELL IT IS. Chopped veggies all enveloped in a creamy, tangy, sensational mixture of cream cheese, sour cream and taco seasoning. It’s a great way to get your kids to eat their veggies {if you choose to share}, plus it’s not too shabby shoved into a burrito or tossed onto some eggs.

All you do is chop up some bell peppers, red onion, black olives, jalapenos and corn and toss in this super easy sauce 🙂 Store it in {the very back} the fridge {behind the milk} for when you need a quick bite or crack it out for a party.

Creamy Cowboy Caviar

Creamy Cowboy Caviar is a delicious side dish, a tasty burrito filling, or a scrumptious scrambled egg topper.

Ingredients

  • 8 oz softened low fat cream cheese
  • 1/4 cup low fat sour cream
  • 2 tablespoons taco seasoning
  • salt & pepper to taste
  • 15 oz black beans rinsed and drained
  • 1 1/2 cups frozen sweet corn
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1/2 large red onion diced
  • 1 jalapeño diced finely

Instructions

  • In a large bowl, microwave softened cream cheese for 15-20 seconds or until very easy to stir. Mix in sour cream and taco seasoning. Stir thoroughly, then add in remaining ingredients. Sprinkle in salt and pepper to taste and serve with crackers, tortilla chips or anything else you'd like.
  • Refrigerate up to 7 days.

    I would put diced up avocado and diced up Mango in this also, just to add another different flavor. Just my opinion.

    This dip looks and sounds amazing! And I cannot believe you missed the opportunity to see my daughter at the Oscars… she was there in the role of a seat-filler and was on TV several times… and was told by Sylvester Stallone that she looked beautiful! Oh, and I haven’t seen any of the Oscar movies, either… I just watched so I could get a chance to see my daughter on TV at the Oscars! ????
