I am a mushroom lover. If you’re new to my blog, then I think it’s good you know this information now. Mushrooms and I go waaaaay back along with butter, lemons and all carbs known to man. Please be advised that I love ALL FOOD.
I am in the right profession, in case you were wondering.
I thoroughly enjoy eating mushrooms of the stuffed variety and gain an abnormal sense of satisfaction when I make and/or eat them. Case in point: Pizza Stuffed Mushrooms, Enchilada Stuffed Mushrooms, Blue Cheese Filled Bacon Wrapped Mushrooms. It’s a favorite past time of mine which is sort of a weird and quirky thing, but I assume its why you all have stuck around this long. Right guys? Riiiiight?!?!
Since I’ve been showcasing my Turketarian-ness these last few weeks, I thought it only appropriate that I share another stuffed mushroom recipe that involves lots of cheese, bbq sauce and Butterball Turkey Bacon. Friends, let me introduce you to your new BFF: BBQ Turkey Bacon Wrapped Cheese Stuffed Mushrooms. Yes, they are as good as they sound.
These mushrooms make a fabulous appetizer or small dinner and turn out to be some seriously cheesy eats.

Here’s how you make these mushrooms:Start by sautéing some onions and garlic in a little butter. Ok, twist my arm! A lot of butter.While those veggies are getting toasty and delicious, wash your beautiful portobello mushrooms and pop out the stems.Also, grate some cheddar cheese into a bowl and stir together with some cream cheese, salt and pepper.Once your onions start getting all brown and yummy, you can stir them into the cheesy filling mixture.I really like my onions borderline burnt. You can cook them however you like. Stir this all together…then stuff into your prepped mushrooms.Now comes the fun part! Grab some Butterball Turkey Bacon and wrap around each filled mushroom, securing with a toothpick.
Like so! Now they can go right onto a hot grill {or under a hot broiler} for about 5 minutes a side.Be sure to brush these little guys with lots of BBQ sauce! That is what makes these so yummy! Well, bbq sauce and turkey bacon!Once the turkey bacon is cooked how you like, remove the mushrooms from the grill/broiler and serve!

BBQ Turkey Bacon Wrapped Cheese Stuffed Mushrooms
Ingredients
- 2 tablespoons butter
- 1/2 yellow onion finely diced
- 2 cloves garlic finely minced
- 12 portobello mushrooms meant for stuffing
- 1 1/4 cups grated cheddar cheese
- 3 oz softened cream cheese
- salt & pepper to taste
- 12 slices Butterball Turkey Bacon
- 1/2 cup favorite brand BBQ sauce
Instructions
- In a medium skillet, melt butter over medium heat. Saute onions and garlic until browned. While onions are cooking, wash and remove stems from mushrooms.
- In a small bowl, stir cheeses, salt and pepper together. Pour cooked onions into cheese mixture and stir. Stuff about 1 tablespoon filling into each mushroom cavity.
- Wrap 1 slice Butterball Turkey Bacon around each mushroom, securing with a toothpick. Place under hot broiler or onto hot grill and cook until bacon is cooked to your liking, basting with BBQ sauce and turning occasionally. Serve warm.
- *I like to grill these mushrooms face down first so the filling gets sealed in by the seared bacon. Some filling might ooze out, but it should be minimal.
