This Buffalo Chicken Pasta made with blue cheese struck me during my second pregnancy! Cravings create delicious recipes y’all! A great blend of my Buffalo Chicken Dip and Homemade Alfredo.
Buffalo Chicken Pasta | An Alfredo Based Recipe
In other news, I’m turning into a buffalo/blue cheese addict. All of a sudden I’m craving the tangy buttery spiciness that buffalo and blue cheese are. It’s a classic combination that I threw off the deep end into “what the blank did she do” territory. Because I am crazy {and pregnant} I made some seriously tasty and super easy buffalo chicken pasta. Buffalo Blue Cheese Mecca, basically.
30 minutes to flavor town for this meal, plus it’s healthier than the real fettuccine alfredo! Probably not by much so don’t get your hopes up, but still!! Take the extra saved calories where you can get ’em! This was a little too spicy for my husband and daughter and on the verge of too spicy for me, but that’s the beauty of this recipe! Reduce the hot sauce and increase the sour cream as you like to adjust the heat level. Super easy to do! Serve with a nice salad and that’s dinner 🙂 Mmmm…..creamy spicy goodness. Get in mah belly.
Main Ingredients Needed
You just need a handful of ingredients to make this Buffalo Chicken Pasta, all of which are pantry staples! Here’s what you’ll need:
- Fettuccine Pasta – you can use any type of pasta here that you like, I just chose fettuccine.
- Butter, Onion + Garlic – lots of simple but impactful flavor here!
- Chicken Breast – cut into bite-sized pieces. You could also use rotisserie, canned or leftover chicken here.
- Hot Sauce – I used Frank’s Red Hot sauce but use what you have or like best.
- Sour Cream – feel free to use low-fat sour cream here. Or if you don’t have sour cream, plain Greek yogurt is a great substitute.
- Blue Cheese – in the sauce and used to garnish. If you don’t like blue cheese, try goat cheese instead.
- Salt + Pepper – season to taste.
- Cilantro – used as a garnish, optional!

Cook Pasta
Bring a large pot of water to boil. Salt the water and cook pasta according to package directions until al dente. Drain and set aside.
Cook Chicken
In a large skillet with high sides, melt butter over medium heat. Saute onions and garlic until tender and lightly brown. Stir in chicken and cook until browned.
Make Sauce, Toss + Serve
Pour in hot sauce, sour cream, and blue cheese. Stir until smooth and warm. Add in salt and pepper as needed. Toss with cooked pasta and top with more cheese and cilantro. Serve hot.

Buffalo Chicken Pasta with Blue Cheese
Ingredients
- 3/4 lb fettuccine pasta
- 3 tablespoons butter
- 1 small onion diced
- 2 cloves garlic minced
- 1 lb boneless skinless chicken breasts cut into bite sized pieces
- 1/2 cup hot sauce such as Frank's Red Hot
- 1 cup low fat sour cream
- 1/4 cup blue cheese crumbles + more for garnish
- salt and pepper to taste
- 2 tablespoons chopped cilantro
Instructions

We have a sandwich shop here who injects their chickens with Tabasco sauce, roasts them, shreds the meat, douses with more sauce, builds the Sammy with wasabi mayo and jalapeño jack on a homemade bun. You will sweat!

Buffalo sauce is the best mixed with a little blue cheese. I love this idea of doing a pasta dish using both of those. Looks wonderful! Pinning this for later.

I love this combo. There use to be a little hole-in-wall place in Springvale, Maine (Stugatzi’s) that made a version of this…we would drive an hour and a half just for this dish.

I love absolutely everything that’s going on in this dish, Lauren. Awesome flavors, and it looks so pretty! I caught a total of 5 minutes of the Oscars, but the best part (the clothes, obviously) is easy to get caught up on after the fact.
