I’m sharing a stupid-easy recipe for Cheesy Beef Enchilada Dip today!
If you have leftover pot roast {like I did the other day}, then this dip recipe will be done in a SNAP. So so simple to throw together and EVERYONE will love it. My two kiddos gobbled this up like crazy and then my husband finished the leftovers. WINWIN, ya’lls. If you’re looking for an amazing appetizer for New Year’s Eve, then this is your ticket.
My husband got a little carried away with scooping up all the cheese. He also went snooping for the larger beef pieces. Can’t blame him for trying because I did the same thing too. Oops. #sorry #notsorry
Hot and cheesy Mexican flavored anything makes me weak in the knees. A good problem to have, folks. So try this Enchilada Dip soon! It’s that good.
Main Ingredients Needed
You only need 4 ingredients (plus tortilla chips) to make this amazing Beef Enchilada Dip! Here’s what you’ll need:
- Leftover Pot Roast – one specifically without gravy! You can use any type of shredded beef or even chicken if you wanted to.
- Red Enchilada Sauce – use the store-bought stuff or use my homemade enchilada sauce.
- Cheddar Cheese – can you tell how much cheese I put on top of this dip? It’s egregious but so worth it.
- Cilantro – this is optional but makes the presentation so nice looking.
- Tortilla Chips – and of course, you’re going to need a way to devour this dip and that’s by using tortilla chips as edible spoons.

Shred Pot Roast
Shred pot roast and place into a large bowl. Stir enchilada sauce into the meat with half the cheese.
Microwave Ingredients
Microwave 3-4 minutes or until hot and cheese has melted. Stir in a little chopped cilantro if you’d like.
Broil + Serve
Pour into an oven-safe dish, top with remaining cheese, and broil until hot and bubbly. Serve immediately with chips.

Beef Enchilada Dip
Ingredients
- 3 cups leftover pot roast not in gravy
- 1 can mild red enchilada sauce 1 1/2 cups or so
- 2 cups cheddar cheese grated
- cilantro optional
- tortilla chips for serving
Instructions

- Pour into oven safe dish, top with remaining cheese and broil 1-2 minutes or until hot and bubbly. Serve immediately with chips.
This came out delicious! I had some tough leftover roast beef to use up and chopped it up and this was a great way to use up that meat. Thanks for the easy, tasty recipe!
