You know how I told you a few days ago how my baby
hates me is teething?
Well lack of sleep gives me motivation to do nothing….except maybe bake treats. Lots and lots of treats.
Liiiiiike exhibit A: this loaf of brownie goodness.
I’ve never cooked brownies in a loaf pan before. Why did I choose a loaf pan, you ask? Because all my other pans were dirty and I didn’t want to wash them. #truestory **Please see 2nd sentence above.
Anyways, this is a divinely inspired treat that can be loosely adapted to any holiday or function worth celebrating AND it’s ridiculously simple to make. Box brownie mix for the win. SPEAKING of box brownie mixes, have you all tried the Ghirardelli brownie mixes? HOLY HANNAH are they good. I’m a recent convert and proud of it, yo. Try the turtle brownies. OMG. That is all.
Here’s how you make these:
Start by lining a loaf pan with parchment paper. Spray with nonstick cooking spray and set aside.
Whip out a brownie mix and stir it all up together according to package directions {usually with eggs, oil and water.} I used the Ghirardelli brand.
Pour half the batter into your prepared loaf pan and then top with a whole bar of white chocolate. Oh yes I did.
Finish it off by pouring the remaining batter on top. Smooth it out and bake a little over an hour.
Hello brownie loaf. How are you? Be sure to let this cool down quite a bit before removing. The parchment paper should help you getting out of the pan.
Once the loaf is completely cool top with a quick cream cheese frosting you can whip together in one bowl! All I did was mix some cream cheese and butter together, then added in powdered sugar and vanilla. That’s it! Once it’s smooth, spread it good.
Now you can chop some halloween Oreos for the top and sprinkle them on top.
Like so! Hello yummy loaf! How are you?
That white chocolate looks awfully tasty in there! Mmm….this was so decadent and rich…knocked my socks off. And my husbands. He wanted to save it to take it to work…but then at it all. So, sorry co-workers. None for you. Maybe next time.
Here’s the printable. Enjoy your weekend 🙂
