Here’s everything you’ll need to make these divine Chocolate Cookie Bars!

  • Unsalted Butter: Make sure it’s softened for easy mixing.
  • Granulated Sugar: Adds sweetness and creates those lovely sugar crystals in the cookie batter.
  • Egg: Helps bind the ingredients together.
  • Vanilla Extract: Adds depth and enhances the chocolate flavor.
  • All-Purpose Flour: Provides structure to the bars.
  • Unsweetened Cocoa Powder: The key to that rich chocolate flavor.
  • Baking Soda and Salt: Ensures the bars rise properly and balance the sweetness.
  • Mini Semi-Sweet Chocolate Chips: For melty pockets of chocolate in every bite.

Variations

  • Add White Chocolate Chips: Swap some of the semi-sweet chips for white chocolate chips to add a sweet contrast.
  • Peanut Butter Chips: A great option for chocolate and peanut butter lovers.

I made these this past weekend & they were so yummy! We actually cut them up & made them into ice cream sandwiches! Very very good!

These look good. I was looking for a chocolate cookie to make an ice cream sandwiche. What size baking sheet do you spread the dough on? Do you know how the cookie freezes? Thanks for the recipe.

    1. Lauren

It’s a half sheet pan, which is 18×13. Did you want to freeze them before or after baking. As long as you wrap them well, it should be fine either way.

I was going to request brownies and ice cream for my birthday. I have changed my mind to this. My husband will be trying out this recipe next week!
