These soft and chewy Peanut Butter Cup Cookies are made with chocolate pudding mix for the best chocolate flavor and texture ever! Each cookie is sandwiched around a Reese’s Peanut Butter Cup and baked. These will disappear fast, so you might want to make a double batch! Do you love a chocolate and peanut butter combo like I do? Easy Pudding Mix Cookies

These divine cookies are soft, chewy and made with a box of chocolate instant pudding mix. The pudding mix adds flavor and moisture to the cookie dough creating the best soft cookie texture. These are a cinch to throw together. Take two scoops of dough and sneak a full size peanut butter cup in between and combine into one large cookie, covering the pb cup. If you want smaller cookies, you can use mini Reese’s Peanut Butter Cups instead!

How to Make Peanut Butter Cup Cookies

Preheat oven. Line 2 cookie sheets with silicone baking mats or parchment paper. Set aside.

Cream butter and sugar together until light and fluffy. Stir in dry pudding mix until well incorporated.

Scrape sides and add in eggs, one at a time along with the baking soda. Gradually beat in flour until completely blended.

Assemble Cookies on Pan

Using a 1 1/2 tablespoon cookie scoop, scoop 6 cookies onto each prepared cookie sheet. Flatten each cookie slightly and top with a whole Reese’s Peanut Butter Cup. Place another cookie dough scoop on top of each peanut butter cup and form cookie dough around it to encase completely.

Note: for a smaller cookie, use a smaller cookie scoop and mini Reese’s Peanut Butter Cups.

Bake + Cool

Bake 8-9 minutes or until cookies have spread and are cooked completely. Cool 3 minutes then transfer to cooling rack. Serve immediately.

Storing + Make Ahead

Following these steps, Peanut Butter Cup Cookies will stay delicious and fresh for several days, making them easy to make ahead for any special occasion.

Make sure cookies are completely cooled down to room temperature. Store cookies in an airtight container with a lid or zip bag, separating layers with parchment paper to prevent cookies from sticking to each other. These cookies will stay fresh at room temperature for about a week.

To Freeze: If you need to store the cookies for longer than a week, you can freeze them in an airtight container for up to 3 months. Thaw the cookies at room temperature before serving.

These chewy Chocolate Peanut Butter Cup Cookies come out perfect every time thanks to some pudding mix. These are my new favorite cookie!

Ingredients

  • 1 cup butter softened
  • 1 cup brown sugar packed
  • 3.9 oz instant chocolate pudding 1 box
  • 2 eggs
  • 1 tsp baking soda
  • 2 cups all purpose flour
  • 16 Reese's Peanut Butter Cups full sized, unwrapped, whole
