There is something about warm fruit with a delicious sugary topping with cold vanilla ice cream that makes me weak at the knees. I’ve made regular Peach Cobbler before but if you are looking for something a bit more adventurous and delicious, adding raspberries takes it to a whole new level of awesome.

Ingredients Needed For Raspberry Peach Cobbler

Raspberry Peach Cobbler is the ultimate comfort dessert, blending the sweet, juicy flavors of ripe peaches with the tartness of fresh raspberries. This cobbler, with its golden brown, buttery crumble topping, is a delight to the senses and such an easy treat to make. Here is everything you’ll need to make this cobbler:

  • Fresh Raspberries: Sweet, tart raspberries that add a pop of color and flavor.
  • Fresh Peaches: Peeled and sliced slightly under ripe for a perfect balance of sweet and tart.
  • Pantry Staples: All-Purpose Flour, Granulated Sugar, Lemon Juice, Cinnamon

Cobbler Topping

  • Butter: cut into small cubes (and then melted) to make a perfect crumbly topping.
  • Rolled Oats: aka Old Fashioned Oats.
  • Pantry Staples: Brown Sugar, All-Purpose Flour, Cinnamon
  • Vanilla Ice Cream – whether you make homemade ice cream or you buy store-bought, it doesn’t matter! You could even eat this cobbler plain or top with whipped cream.

How to Make a Fresh Raspberry Peach Cobbler

1. Preheat Oven + Prep Pan

Preheat oven to 350° F. Lightly grease square dish or other baking dish and set aside.

2. Prepare Fruit

In a large bowl, mix all ingredients for the fruit filling (raspberries, peach slices, flour, sugar, lemon juice and cinnamon), being careful not to break the raspberries.

3. Make Topping

In a medium bowl, mix all ingredients for the cobbler topping together using a pastry cutter or your hand, until moist (melted butter, brown sugar, oats, flour and cinnamon). Be careful to not over mix. We want to keep the topping crumbly.

4. Assemble

Pour the raspberry and peach mixture into the prepared dish and sprinkle the crumble topping over the fruit.

5. Bake

Bake for 30-40 minutes or until the top is golden brown and the peaches are tender. Remove from oven and serve warm with ice cream and/or whipped cream.

Storage + Make Ahead Directions

Store any leftovers in the fridge in an airtight container for up to 3 days. Reheat in the oven to maintain the crisp topping.

To Make Ahead: Prepare the fruit and topping separately and store them in the fridge. Assemble and bake when ready.

To Freeze: After baking, let it cool completely, then cover tightly and freeze up to 3 months. Thaw in the fridge overnight and reheat in the oven before serving.

Is there a gluten-free version?

Yes, use gluten-free flour and oats for a gluten-free cobbler. Easy peasy!

What if my peaches are too ripe?

Overripe peaches tend to be too juicy for cobbler. Add a tablespoon of corn starch to the filling to absorb excess moisture.

Can I use canned peaches?

    This is not a cobbler, but a crisp. Cobblers have shortbread like sweet dough. Although misnamed, this is still an excellent very easy recipe.

      If you’re going to use frozen fruit I would double the flour in the recipe. The brands vary, fruit to fruit, with how much liquid they give off. So, doubling the flour should definitely help combat that! Might be a tad bit watery still, but definitely still delicious.

      Made this tonight. It was very good. The fruit was extra tart. Next time I make it. I think I will double the ingredients for the topping and do a layer on bottom and on top with the fruit layered in the middle. Have you ever tried this?
