As I write this post, my husband is doing dishes with our 3 year old singing along to Lets Get it On by Marvin Gaye. It’s rather adorable and entertaining. Sometimes I love that man more than words can say.
Love him because he keeps me sane.
Love him because he cleans up after my ‘experiments’ in the kitchen.
Love him because he has big muscles.
Love him because he loves me despite the fact that I have thunder thighs and a slight spending problem at Costco.
And love him because he appreciates Mexican food as much as I do. And by Mexican I mean guacamole. One day last week his lunch consisted of chips and guacamole. That was it.

I should make a bumper sticker with that on it. They’d sell like hot cakes.
Anyways, with avocados on the cheap at Costco and Whole Foods {surprisingly} I always have 4+ green little dudes on my counter at the ready. With Cinco de Mayo approaching, I thought it only fitting to marry le margarita with le avocado to make le margarita guacamole. Yup. I totally went there. And you need to go there too. This stuff will knock your socks off. Limey and salty with a hint of orange. Perfect plain with chips or up on top of some burritos or something.
For those of you not on the guacamole train, these other mexican favorites will still make a killer Cinco de Mayo: tacos, grilled burritos, 9-layer dip, warm & spicy black bean dip, enchilada lasagna, enchilada stuffed mushrooms, pomegranate lime margaritas, quesadillas. You’re bound to love one of these recipes. {I’d highly recommend the black bean dip and the stuffed mushrooms.}

Margarita Guacamole
Ingredients
- 2 large Haas avocados
- zest + juice of 1 lime
- 1/2 teaspoon orange zest
- 3 tablespoons chopped cilantro
- salt + pepper to taste
Instructions
- Cut avocado in two and remove pit. Scoop out the insides and mash. Stir in lime zest, lime juice, orange zest, cilantro, salt and pepper. Place into salt rimmed serving dish and serve with chips.

My boyfriend is crazy…he doesn’t *love* avocados (he likes them…but really, you either love avocados, or you suck. No middle ground!), and he hates beans! But he loves carnitas… So when we eat Mexican, I eat the beans and guac off of his plate, and he eats the meat off mine. I love him for sharing 😉
The salt rim is such a good idea! Can’t have a true margarita without it!
I am drooling just looking at the pictures! If you come up with a recipe for Chipotle’s rice, their corn salsa/relish, and their chicken my husband & I would be eternally grateful! Because between the guacamole and them you have my ALL time favorite foods! And to think I have limes in the freezer (thank you grocery store for buying too many and then putting them on clearance!! organics ones too!!)
I’ve come across a lot of recipes for Chipotle salsas and rice! Just google “copycat Chipotle ____” and you should find a bunch! Yum, drooling just thinking about it….
